SOOFGANYOT
These are puffy donuts with an Israeli
accent.
1 package (2 tsp.) active dry yeast
1/2 cup warm (105-115oF) water
1 tsp. plus 1/4 cup sugar
2 large eggs
6 Tbsp. vegetable oil
3-4 cups flour
Oil for frying
1-2 cups preserves of choice
Place yeast in a medium bowl. Pour
warm water and 1 tsp. sugar over the
yeast and let sit for 10 minutes until
bubbly.
In a separate bowl, beat 1/4 cup
sugar and eggs until smooth. Add the
oil and yeast mixture and beat for 2
minutes on medium. Fold in only
enough of the flour to make a thick,
smooth, elastic dough.
Place the dough in a well oiled
bowl, cover with plastic wrap and
keep in a warm, draft-free place for
2-3 hours to rise.
Turn the dough onto a floured
surface and knead for about 2 min-
utes. Roll the dough to about 1/2-
inch thickness. Cut the dough with
the bottom of a round glass or cookie
cutter into about 24 circles. Shape
the dough with your hands to a
rounded, but not completely spheri-
cal, shape. Place on an oiled cookie
sheet to rise again for about 20 min-
utes.
Heat about 2 1/2-inches of oil in a
large pot over high heat. When the
oil is very hot, drop some of the
dough balls into the oil — do not
crowd the pan. Reduce heat slightly
and fry the soofganyot for about 4
minutes until browned on one side.
Turn them over and fry 2 minutes or
so until the other side is golden.
Remove each donut with a slotted
spoon and drain well on paper towels
or a cooling rack.
When cool enough to handle, cut -
a small slit into the side of each
donut and work a little of the jam
into the center, or fill a pastry bag,
With a large round tip, with the jam.
Insert the tip into the side of the
soofganyot and squeeze a small
amount of jam into each.
