IT'S A PROMISE.

Spoon out 2 Tbsp. of the dumpling
mixture and shape into a 3-inch patty.
Place on a floured surface. Repeat
with another 2 Tbsp. of mixture. Place
a heaping tsp. of the filling onto the
center of one of the patties. Place the
other patty over the first and pinch
the edges together to seal. Repeat with
remaining dumplings and filling.
Heat about 1/4-inch of oil in a
large non-stick skillet. Fry the
dumplings until browned on one side
and turn to fry until golden on the
other side. Drain on paper towels and
serve right away or reheat later at
300oF for 10-15 minutes until hot.
Makes 12-16 dumplings.

STUFFED GRAPE LEAVES
RODICA BLUMENTHAL
1 pound lean ground beef
1 small onion, chopped fine
1/2 cup, plus 2 cups tomato sauce
1 Tbsp. plus 2 Tbsp. sugar
1/4 cup converted rice
1 egg
Salt and pepper to taste
Juice of 1 lemon (optional)
1 can (16-ounces) stewed tomatoes,
pureed
20-30 grape leaves (in jars) drained
and rinsed well in cold water
Combine ground beef, onion, 1/2
cup tomato sauce, 1 Tbsp. sugar, rice,
egg, salt and pepper in a medium
bowl. Mix thoroughly with your
hands until all the ingredients are
incorporated.
Microwave a tiny amount of the
meat mixture to taste the filling and
adjust seasonings to taste.
Assemble the grape leaves: Place a
grape leaf on a clean surface, ribbed
side up, stem toward you. Place a
heaping teaspoon of filling in a line on
the center of the leaf. Fold the leaf
over the filling, away from you. Then
fold both sides of the leaf toward the
center and continue rolling the leaf,
egg-roll style. Do not roll too tightly
or the filling will burst through the
skin of the leaf while cooking. Repeat
with remaining leaves.
Place the grape leaves neatly, seam-
side down, in the bottom of a Dutch
oven or large saucepan, placing the
stuffed leaves very close together, fit-
ting as many leaves as possible in one' -'
or two layers, without any spaces in
between. Pour the remaining tomato
sauce and stewed tomatoes over the
leaves. Season with salt and pepper,
remaining sugar and lemon juice.
