Delicacies from around
the world for the holiday
of Chanukah.

C

hantikah is one of those rare
holidays that most Jews real-
ly celebrate for the full eight
days.
The candles are lit all eight nights
and potato latkes are often served
more than once.
Ashkenazim have romantic memo-
ries of shredded potato patties drown-
ng in sour cream. But potato latkes
are not the whole food story when it
comes to Chanukah around the world.
Every country does the fried foods
routine. And those who know do
dairy products. But the diversity of
the foods from around the world is
astounding. Russians make pancakes,
but sometimes they're in a version of
blini, thin pancakes made with yeast.
'Turkish Jews will make yoyos, whimsi-
cal-shaped pastries which are deep
fried and dipped in a sweet honey-
and-lemon syrup.
Still more unusual to our restrained
American palates are stuffed grape
leaves for Chanukah, like Jews make
in Romania.
Detroit's Romanian population
enjoys recreating Romanian food
vorites, especially around holiday
time. Rodica and Aron Blumenthal of
Southfield came to Michigan from
Bucharest in 1965. Rodica learned to
make Romanian specialties from her
mother who, Rodica says, "cooked a
lot." Her Balkan upbringing included
all the old food favorites like gefilte
fish and latkes.
But Romanian cuisine also reflects
veral hundred years of Ottoman
rule. "My mother used to make sweet-
and-sour grape leaves for Chanukah
and stuffed potato dumplings from
her native Moldavia," she said. "The
sweet of the grape leaves came from
sugar and the sour from the lemon
and brine in which the grape leaves
were packed. We also had puffy,
round, European-style donuts (like
soofganyot), and borscht, hot beet
soup with meat.
"We made the grape leaves and
dumplings ahead of time, but fried the
donuts just before eating them,"
added Blumenthal. "We used to have
all the family over and my mother
made the donuts. She liked to play

tricks with the family and some of the
donuts she stuffed with cotton and
some with mustard. The children
would laugh when someone bit into
the surprise fillings."
For a different and interesting
approach to Chanukah this year, try

Romania

GALAUSTE DE CARTOFI
Pronounced gah-LOOSH-teh dee kar-
TOFF-ee, these stuffed potato
dumplings are another version of
latkes. What makes these special is
that they may be made ahead of time
and stuffed with cooked ground beef,
grated cheese or minced vegetables
instead of the golden onions.

13 Bagels • 2 Crean) Cheese Tubs

Dumpling:
3 medium potatoes, cooked and
mashed
1/2 tsp. salt
3 Tbsp. flour
Vegetable oil for frying
Filling:
2 Tbsp. oil
1 large onion, chopped
2 medium potatoes, cooked and
mashed
Combine the dumpling ingredients
except oil and set aside.
Make the filling: Heat oil in a large
skillet or medium-high heat. Add the
chopped onion and cook, stirring
occasionally for about 10 minutes
until soft and golden. Let cool. Place
the cooled onions in a medium bowl.
Add the potatoes and mix until well
incorporated.
Dust your hands well with flour.
