1 cup water
1 cup freshly squeezed lemon juice
(about 6 lemons)
2 tablespoons grated lemon zest
(about 3 lemons)

In a small, heavy saucepan, combine
the lemongrass, sugar, and white wine.
Cover and bring to a boil. Remove
from heat, cover, and let sit until cool,
about 1 hour.
When cool, strain the mixture
through a fine-meshed sieve into a
large metal bowl. Add the•water,
lemon juice, and lemon zest.
Refrigerate for an hour, then freeze
in an ice cream maker according to
the manufacturer's instructions.
Makes about 1 quart
Note: Fresh lemongrass is becom-
ing widely available and can be found
in grocery stores, gourmet shops, and
ethnic markets.

CHOCOLATE-RUM SORBET
2 cups hot freshly brewed coffee
3 ounces bittersweet chocolate,
finely chopped
1 cup unsweetened cocoa powder
2/3 cup sugar
1/4 cup dark rum
2 teaspoons grated orange zest
(about 1 orange)
1 tablespoon pure vanilla extract

In a medium bowl, whisk together
the hot coffee and chocolate. Set
aside.
Sift together the cocoa and sugar
and place in a blender or large-capaci-
ty food processor. With the machine
running, add the coffee mixture in a
steady stream. Blend until smooth.
Stir in the rum, orange zest, and vanil-
la. Pour into a metal bowl, refrigerate
for 1 hour, then freeze in an ice cream
maker accordinc, to the manufacturer's
instructions.
Makes about 1 quart.
