rush to place more kosher items on
their shelves.
Early on, customers trickled into
Ohana's store. After business picked up,
he began to hear complaints about the
spiciness of the food.
"For those of us from Israel, we grew
up with hot dishes. There was spice in
everything," he said.
"But Americans aren't used to that.
If this is what they want, I will give it
to them."
The Moroccan-born entrepreneur
also heard that there wasn't enough tra-
ditional Eastern European food on his
menu, such as kugels and gefilte fish.
He also accommodated those wishes.
Aron Sigler, owner of Sigler's
Catering, admires Ohana's willingness
to adapt recipes without using
processed foods.
"He is a perfectionist," Sigler said.
"He uses only the freshest ingredients."

recent Wednesday afternoon, when
business is generally slow, 11 customers
wandered into the store during a half-
hour period, most making purchases.
At mealtimes, it is not unusual to see as
many standing in line to purchase
items from the display cases, which are
laden with a variety of salads and
Mediterranean dishes.
Ohana hopes his business offers cus-
tomers more than they are accustomed
to, pointing to the convenience of pur-
chasing groceries at the same time as
prepared deli items.
The store in the near future will also
offer difficult-to-find Israeli items. For
example, one customer recently asked
for a traditional Israeli dessert item
consisting of a cookie filled with rich
cream. Ohana spent 10 days on the
phone, determined to find the elusive
treat, until he found a New York food
