Melt butter for white sauce. In it,
cook 4 ounces sliced mushrooms until

Stir in flour, then immediately add
milk, and cook, stirring, until thick-
ened (about 2 minutes). Stir in 1/4
teaspoon each salt and pepper. Stir 2
teaspoons lemon juice into finished
sauce. Good with green beans, pota-
toes, spinach (in creamed spinach).
