1 garlic clove, pressed through a
garlic press
1 1/2 to 2 pounds beef flank steak,
well-trimmed
salt and freshly ground pepper
8 large slices crusty Italian
sourdough bread
Dijon-style mustard
4 large pickled peppers, drained and
cut diagonally into 1/4-inch wide
strips
4 plum tomatoes, thinly sliced
3/4 cup packed small arugula leaves
In a shallow bowl deep enough to
hold steak, stir together oil, vinegar
and garlic. Turn steak in mixture and
marinate at room temperature 30 min-
utes, turning several times. Preheat grill
or broiler until very hot.
Remove steak from marinade, let
excess liquid drip off and season meat
generously with salt and pepper. Grill
to desired degree of doneness, 3 to 5
minutes per side, basting with mari-
nade. Meanwhile, spread one side of
each bread slice with mustard to taste.
Scatter peppers evenly over bread
slices. With a carving knife, cut steak
into 1/4-inch thick slices and drape
over peppers. Top with tomato slices,
arugula and remaining bread. Makes 6
servings.

UPTOWN MEATLOAF BURGERS
WITH SPICY KETCHUP (MEAT)
1 pound lean ground beef
1 pound ground turkey
1 egg
1 jar (4 ounces) diced pimento
1 small red onion, finely chopped
3 tablespoons matzah meal
2 tablespoons tomato ketchup
1 tablespoon finely chopped fresh
Italian parsley
1/2 tablespoon dried oregano
salt and freshly ground pepper
6 large onion or kaiser rolls, split
6 large beefsteak tomato slices
6 butter or red-leaf lettuce leaves
Preheat grill or broiler until very
hot. In a medium-size bowl, use your
fingers to mix together beef, turkey,
egg, pimento, onion, matzah meal,
ketchup, parsley and oregano. With
your hands, form meat mixture into 6
patties slightly wider than the buns.
Season burgers generously on both
sides with salt and black pepper and
cook close to heat until medium
done, 4 to 5 minutes per side. Toast
the split sides of buns on the grill or
under the broiler and generously
spread both halves with Spicy Tomato
Ketchup. Place burgers in buns and
top with tomato and lettuce. Makes 6
servings.
