UPTOWN MEATLOAF BURGERS WITH SPICY KETCHUP (MEAT) 1 pound lean ground beef 1 pound ground turkey 1 egg 1 jar (4 ounces) diced pimento 1 small red onion, finely chopped 3 tablespoons matzah meal 2 tablespoons tomato ketchup 1 tablespoon finely chopped fresh Italian parsley 1/2 tablespoon dried oregano salt and freshly ground pepper 6 large onion or kaiser rolls, split 6 large beefsteak tomato slices 6 butter or red-leaf lettuce leaves Preheat grill or broiler until very hot. In a medium-size bowl, use your fingers to mix together beef, turkey, egg, pimento, onion, matzah meal, ketchup, parsley and oregano. With your hands, form meat mixture into 6 patties slightly wider than the buns. Season burgers generously on both sides with salt and black pepper and cook close to heat until medium done, 4 to 5 minutes per side. Toast the split sides of buns on the grill or under the broiler and generously spread both halves with Spicy Tomato Ketchup. Place burgers in buns and top with tomato and lettuce. Makes 6 servings.
