LASSI (DAIRY)
1 113 cups low-fat vanilla yogurt
1 cup low-fat milk
1 cup frozen vanilla yogurt
1/2 cup crushed ice
1 teaspoon rosewater or 1/4
teaspoon vanilla extract
1/8 teaspoon ground cardamom
1 tablespoon honey, or to taste
Blend the yogurt, milk, frozen
yogurt in a blender or food
processor. Add crushed ice and
rosewater, or vanilla, and car-
damom. Process or blend 5 sec-
onds longer. Taste and add
sugar if preferred. Pour into
chilled glasses. Makes 2 to 3
servings.
CITRUS MINI' JULEP
(PAREVE)
1 1/2 cups cold strong tea
2 tablespoons frozen orange
juice concentrate, thawed
1 tablespoon frozen lemonade,
thawed
2 tablespoons coarsely snipped
mint leaves
sparkling water
ice cubes
mint sprigs (optional)
In pitcher or bowl, mix tea with
orange juice, lemonade and
mint leaves. Half-fill 2 tall glass-
es with ice cubes. Pour tea mix-
ture over and top up with
sparkling water or club soda.
Garnish each glass with a mint
sprig (optional). Makes 2 serv-
ings.

3 cups cold strong tea
4 cups pineapple juice
1 (8 ounce) can sliced pineapple
2 tablespoons ginger or apricot
preserves, warmed
1 teaspoon angostura bitters

RASPBERRY CUP
(PAREVE)
1/4 cup fresh raspberries
2 ripe peaches, sliced
1 tablespoon lime juice
2 cups strong cold peach-
flavored tea
1 small bottle chilled bitter
lemon soda
Spoon raspberries into 2 tall
glasses. Set aside. In blender or
food processor, place peaches,
lime juice and tea. Blend or
process until peaches are
pureed. Pour mixture over rasp-
berries and stir gently to mix.
Top with bitter lemon soda.
Serve at once. Makes 2 serv-
