"People can frequent the most
expensive, highly touted dining
establishment in town, and if the
waitperson is surly or rude, cus-
tomers will stay away.
"We recently tried a new
restaurant where the food was
more than adequate. But the
waitperson was so unfriendly and
strictly businesslike, we're not apt
to return anytime soon.
"At another fine-dining spot, we
ordered Caesar salad with chick-
en. We politely told the waitper-
son that the salad was bland and
needed more dressing. Instead of
complying, he said abruptly,
That's the way our Caesar salad
is. Do you want something else?'
"We sprinkled more Parmesan
cheese on the salad. That didn't
cut it and neither did the wait-
person.
"You can immediately tell
which restaurateurs train their
staffs° customers will be pleased,
tell their friends and frequent the
establishment many times.
"A friendly smile is always the
best opener. If the waitperson
doesn't give her or his name, it's
nice to ask. That can be the most
effective ice-breaker.
`The savvy waitperson doesn't
rattle off the specials of the day,
so by the time the last item is de-
scribed you forget the first on the
list. Taking it slow, describing in-

gredients with patience and an-
swering diners' questions are al-
ways appreciated.
'When the waitperson brings
the beverages, it's cool for him or
her to tell you that you have time
to decide on your menu item. No-
body likes to feel rushed. A few
well-timed suggestions from the
waitperson usually scores points.
`Bringing iced water, bread and
butter and house appetizers com-
forts the hungry patron. The bus-
boy is an integral part of the staff
and should never grab plates from
customers before they have fin-
ished.
'When the waitperson brings
the meal, he or she should wait
a few minutes before returning
and asking if everything is satis-
factory. Unfortunately, in some
restaurants, waitpersons don't
come back until it's time for the
check.
"Keeping coffee cups filled and
hot is another indication of a good
employee. The size of the tip will
show the diner's appreciation for
the pleasant, efficient service."

DETROIT RED Wings star
Dan-en McCarty and former Wing
Bob Probert of the Chicago Black-
hawks will be among the partners
in the new 24-hour Little Daddy's
Coney Island and Parthenon
opening at Applegate Square.
They join Tommy Peristeris and
Rick Rogow of Big Daddy's, along
with Jimmy Zavrodinos, Tommy's
partner at the Parthenon Coney
Island on Ford Road and Green-
field in Dearborn.
Expected opening is first week
in August.
A second Little Daddy's Coney
Island and Parthenon is sched-
uled to open the end of Septem-
ber in the Southland Mall on
Eureka Road in Taylor ... Like Big
Daddy's, it is also a former Sign
of the Beefcarver building.
DISA 'N DATA ... Nino Cu-
traro, owner of Intermezzo in
downtown Detroit, is expected to
open his new Pontiac restaurant-
banquet sector around the second
week in August ... Ristorante Ba-
ciabracci will be located on Nino's
former Ultimate Sports Bar site

Coney Island, in the Bay Pointe
Plaza at Haggerty and Richard-
