blade for 2 to 3 seconds or until
mixed. In a large bowl, combine
the cream cheese mixture,
raisins, 1 tablespoon of the beat-
en egg, milk and cream; mix well.
Drop the batter 1 inch apart on
the baking sheet, using 2 table-
spoons of batter for each scone.
Shape scones with wet fingers for
more uniform shapes. Brush the
scones with the remaining beat-
en egg. Bake at 400 degrees for
12 to 17 minutes or until light
brown. Remove to a wire rack to
cool. Makes about 36 scones.
EASY HOMEMADE
APPLE BUTTER
(PAREVE)
3 1/2 pounds apples, cut into
quarters
2 cups water, cider or cider
vinegar
1/2 cup packed brown sugar per
cup of pulp
Combine the apples and wa-
ter in a heavy saucepan; mix
well. Cook, covered, over medi-
um heat, until the apples are ten-
der, stirring occasionally.
Remove from heat. Press the ap-
ples through a food mill into a
bowl, discarding the peel, seeds
and excess fruit. Measure the
pulp. Combine the pulp with the
correct amount of brown sugar
in a saucepan; mix well. Cook
over medium heat until the
brown sugar dissolves, stirring
constantly. Cook for 1 1/2 hours
or until the mixture is thickened
and dark, stirring occasionally.
To test readiness of the apple
butter, place a spoonful on a plate
and if no liquid appears around
the butter it is ready. Yields 4
cups.

113 cup rolled oats
1 teaspoon baking soda
1/4 teaspoon each: salt, nutmeg,
cinnamon
1 egg plus 2 egg whites, beaten
2 tablespoons low-fat milk or soy
milk
1/2 to 2/3 cup light brown sugar,
to taste
1 cup mashed banana (about 2
large)
1/4 cup safflower oil
1 teaspoon vanilla
1/3 cup finely chopped almonds,
optional
Preheat oven to 350 degrees.
Combine the first 3 ingredients
in a mixing bowl. Stir in the salt
and spices. In another bowl, com-
bine the beaten eggs and milk
with the sugar until it dissolves.
Beat in the bananas, oil and
vanilla until the mixture is
smooth. Make a well in the cen-
ter of the dry ingredients and
pour in the wet mixture. Stir to-
gether vigorously until com-
pletely combined. Stir in the
nuts. Pour the batter into an
oiled 9- by 5-inch loaf pan. Bake
for 45 minutes or until a knife in- -\
serted into the center tests clean.
Makes 1 loaf.
