have a key to his establishment,
handing over that responsibili-
ty to the rnashgiach (kosher su-
pervisor).
"I don't have a problem with
that," Mr. Prentice said. "I think
that it is important. If you are
going to do something, you need
to do it right.
"I would want any observant
Jew to be able to walk into the
restaurant and feel that it is
probably the most highly super-
vised restaurant," Mr. Prentice
said.
At the Royal Oak proposed
venture, to be called Avante
Garde, Mr. Cartagena said he
has no problem with having con-
stant supervision.
"I welcome it," he said. "I will
have a totally open kitchen. Any-
one is welcome in to inspect any-
time."
The take-out places new to
the community are both in Oak
Park. Taste of Israel, a fleishig
venture, is situated in the Roy-
al Plaza shopping center at Ten
Mile and Greenfield roads and
is under the supervision of the
Vaad.
Ramatari Gourmet Vegetari-
an Cuisine received supervision
last week from Rabbi Jack Gold-
man of the Metropolitan
Kashruth Council of Michigan.
The take-out business is in the
site of the former Cohen and Son
Kosher Meats on Coolidge be-
tween Lincoln and 11 Mile
roads.
The owners, Asher Galed and
Hanna Ibrahim, have expanded
their growing pareve Mediter-
ranean food business, which was
only available in coffeehouses
and select grocery stores. By
moving into a new building, they
felt it was time to add a take-out
counter and time to also go
kosher.
"Some customers had been
asking us to go kosher," Mr.
Galed said. "We decided to do it
at the same time that we are ex-
panding."
They also decided to add a
cooler full of Ray's Ice Cream,
a locally made previously
nonkosher product. In doing so,
Ray's had to become kosher.
"Rabbi Goldman came over,
looked through our operation
and told us that all of the ingre-
dients we are using are already
kosher," said Art Stevens, vice
president of the company that
started in 1958.
As a result of the endorse-
ment, the parlor on Coolidge
Highway between Normandy
and 14 Mile Road will also be a
kosher hangout. Although the
parlor already attracts hundreds
of people nearly every summer
night, Mr. Stevens hopes that
adding the kosher heksher will
add more lovers of Ray's Ice
Cream.
"We thought this may expand
our market," he said. El
