"It is the Vaad's intention to
have a place in the community
where people who are frum (ob-
servant) and interested in a
kosher meal can go and eat,"
said Rabbi Elimelech Silberberg,
a member of the Vaad's presid-
ium.
One of the future restaurants
that seems to garner the most
grist on the local rumor mill is a
dairy venture to be situated in
the West Bloomfield area. Matt
Prentice, president of the
Unique Restaurant Corporation
which owns Deli Unique, Plaza
Deli and 11 other area restau-
rants, confirmed that he is in ne-
gotiations with the Council of
Orthodox Rabbis of Greater De-
troit for supervision of such a
venture.
"I just met with them again
this week. We are still talking,"
Mr. Prentice said. "The Vaad
has tentatively given me their
blessing to open a milchig (dairy)
restaurant under very strict con-
trols."
So far, no location has been
chosen for the restaurant, al-
though Mr. Prentice said it
would ideally be within a three-
mile radius of 15 Mile and Or-
chard Lake roads. He is shying
away from the Oak Park area,
where the other restaurants
failed.
"I drove down by where the
other restaurants were. There
were 'For Lease' and 'For Sale'
signs everywhere," he said.
"There was nothing going on
there." •
The menu also will not be the
same as in past ventures, stick-
ing to dairy instead of meat.
"With meat, you are looking
at items that will be two to three
times the price [of non-kosher
meat]," he said.
"Part of the problem is that
there aren't enough people
who keep kosher to keep the
restaurant alive, so you have to
appeal to the larger communi-
ty," Mr. Prentice said. "If you do
fleishig (meat), you have to
charge so much more that - peo-
ple who don't give a hoot about
it will say, 'Why should I pay $5
more for this chicken dinner
when I can get it cheaper else-
where?' "
The venture to be located in
downtown Royal Oak will have
strictly vegetarian items on its
menu when it opens in Septem-
ber. Mr. Cartagena said the
menu will be vegan, meaning no
animal meat or by-products will
be used in any of the dishes. Ad-
ditionally, he plans to use no oil
or fats in his cooking.
"Ninety percent of what I use
is fresh vegetables," he said.
"This way, I will never have to
worry about my boards or my
knives. They will have never
touched meat or dairy."

Both Mr. Cartagena and Mr.
Prentice have extensive expe-
rience within the Jewish com-
munity even though neither is
Jewish.
Within the past few years, Mr.
Cartagena has been the execu-
tive chef for Sperber Kosher
Catering and was the chef for
the Hillel group on Wayne State
University's campus.
Mr. Prentice is the official
caterer of Temple Israel
and Temple Shir Shalom. He
hopes to eventually use the
restaurant as a base for kosher
catering.
- Their experience not with-
standing, having non-Jewish
owners of kosher eating estab-
lishments has posed some con-
cern with the Vaad, Rabbi
Silberberg said.
"If a person would be an ob-
servant Jew, then there is a cer-
tain element of reliability that
exists," Rabbi Silberberg said.
"They accept the laws of kashrut
and the laws of Torah."
To remedy the situation, the
Vaad will have strict controls in
place, he said. For example, Mr.
Prentice will most likely not

Bloornfield will open its social
hall for meals once a week.

Bais Chabad of West Bloom-
field is planning to add its
name to the growing list of
kosher hangouts in the Detroit
area.
Beginning after Shavout,
the shul plans to offer to the
community the chance to have
Wednesday night dinners out
on the town. In its newly ODITI-
plethd social hall, the shul has
contracted with Jewel Kosher
Catering to provide the fixings
for the meal, said Rabbi Elim-
elech SiTherberg.
"As long as there is no
kosher restaurant to support,
we plan to offer an alterna-
, tive," Rabbi Silberberg said
The shul joins the Jewish
Community Center and Sper-
ber Catering in offering din-
ing alternatives to kosher
keepers in the area. Since late
February, Sperber's has of-
fered a moderately priced hot
meal in the cafeteria of the
JCC every. Tuesday, attract-
ing crowds of over 200 people
many weeks. D
