3/4 pound potatoes, skin on
3/4 cup chopped onion
2 slices bread, crumbled
1/2 cup bread- or all-purpose flour
1 1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon ground black pepper
1/2 cup vegetable oil
2 beaten eggs
Shortening for greasing pan

In a large bowl sprinkle the yeast

over the warm water and stir
slightly. Add the 11/2 cups of flour
and mix until the mixture is
smooth. Cover and set aside un-
til it puffs up (about 20-25 min-
utes). •
Stir down the dough. Scrub the
potatoes, then grind or grate
them with the skins on. Add the
potatoes and onion to the dough
and stir until blended. Add the
bread crumbs, flour, salt, baking
powder and ground pepper and
mix well. Add the oil and egg and
mix well.
Split the *mixture between 3
well-greased 8- or 9-inch loaf pans.
Leave room at the top for the
Potatonik to rise. Place a bowl of
water on the lowest most rack of
the oven and then preheated the
oven to 350. Bake until the crust
is brown and feels firm when gen-
tly pressed in the center with your
fingertips (about 1 hour). Let cool
on a wire rack covered with a cloth
for 5 minutes to allow the loaves
to steam. Invert and tap out onto
the rack. Serve warm.
The Potatonik can be refriger-
ated for several days or frozen for
1-2 weeks. Reheat at 325 until
warm, or develops a hard crust if
desired. Makes 3 loaves.

1 teaspoon sugar
1/2 cup lukewarm water
2 packages yeast
4 eggs
1/3 cup sugar
1 tablespoon salt
2✓3 cup oil
13/4 cup warm water
8 cup flour (approx.)
2 grated onions
1 tablespoons salt
112 cup poppy seeds
1/2 cup melted butter or
margarine

In a small bowl dissolve sugar in
the 1/2 cup water. Sprinkle the
yeast on top (let set 10 minutes).
Mix in the eggs, sugar, 1 T. salt,
oil, water and 1/2 the flour. Mix
well and add the rest of the flour.
Let the dough rise for about 30 to
40 minutes and punch down.
Divide the dough into 3 por-
tions and roll each section out to
about 1/2 inch thick (sort of like a
pizza). Prick the top with a fork
and place on greased cookie sheet.
Preheat oven to 400 and let the
dough rise 10 to 15 minutes.
In a small bowl combine the re-
maining ingredients. Divide the
onion/poppy seed mixture be-
tween the thme loaves and spread
it over the top. Bake 20 minutes
and cool slightly before serving.
Makes 3 loaves.
