3 cloves garlic
I tsp. ground cumin
1/2 tsp. black pepper
juice of one lemon (or more
to taste)
2 Tbsp. olive oil
Greek olives, olive oil and
paprika for garnish

Combine chick peas, garlic,
cuinin, lemon juice and two
tablespoons olive oil in bowl
of food processor or blender.
Puree until smooth. If the
hummus is too thick, add wa-
ter and puree to consistency
of peanut butter. To serve,
spread on a plate and drizzle
with olive oil and dot with
olives. Sprinkle with paprika
and serve as a dip for vegeta-
bles or pita triangles.
Makes about 2-
1/2 cups.

1 /4 cup olive oil

1 tsp. fresh, ground black
