so foul with the six jars, one can
and one boiled fish loaf that no
one would go near the room for
hours afterward. A pound of Go-
diva would have been safe in The
Jewish News lunchroom until the
next day; it smelled that bad. I
couldn't imagine compounding
that situation with four times the
amount of offerings.
So, after shopping for hours at
Kroger's, Fanner Jack, One Stop
Kosher and Lakewood Special-
ty Foods, I narrowed the field to
selections that simply said "gefilte
fish." No sweet, no whitefish only.
An old Vienna-style slipped past
me, but that was it.
Each of the offerings had be-
tween 60 to 70 calories per serv-
ing, 200 to 310 milligrams of
sodium and about 4 grams of pro-
tein. None were exceptionally
high in nutritional value.

A decade ago, soy foods were
shrouded in mystery to all but
dedicated vegetarians. Today,
health-conscious Americans are
discovering the versatility and
good taste of the nutrition-packed
soybean.
According to the Soyfoods As-
sociation of America, to satisfy de-
mand, more than 2,000 new soy
products have come on the mar-
ket since 1985. From tofu to tern-
peh, sales are booming.
The reason is simple. Cardio-
vascular disease afflicts one in
four Americans and it's proven
that diet is a major factor. In the
search for meat and dairy alter-
natives, soy products have come
into their own. In addition to good
nutrition, soy ingredients may be
transformed into delicious dish-
es both at home and commercial-
ly.
The protein found in soybeans
is "complete," meaning that all
eight amino acids needed for hu-
man health are present. Soybeans
are the only vegetable food to con-
tain these complete proteins. Rich
in nutrients such as calcium, iron
and B vitamins, they are choles-
terol free with minimal saturat-
ed fat — right in step with today's
dietary recommendations.
Soybeans also are a unique
source of compounds called
isoflavones that may help reduce
the risk of osteoporosis.
For the kosher cook, soy prod-
ucts are pareve. For nonmeat
kosher products such as frank-
furters and veggie burgers, soy-
beans are indispensable, adding
unlimited variety to kosher
menus.
