I received a letter from a reader
who is diabetic, requesting that
I send her some sugarfree
dessert recipes.

SOFT OATMEAL

CO OKIE

1 cup whole wheat pastry flour
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1/4 teaspoon nutmeg
2/3 cup apple juice concentrate
diluted with 1/4 cup water
2 tablespoons vanilla
3/4 cup raisins
3 egg whites beaten to a stiff
peak

1. Combine dry ingredients in
a large bowl. Mix well.
2. Combine the apple juice
concentrate/water mixture,
vanilla and raisins. Stir into dry
ingredients blending well.
3. Fold in beaten egg whites.
4. Drop by heaping table-
spoonfuls onto a nonstick cook-
ie sheet.
Pat down each mound lightly.
5. Bake in a 400 degrees oven
for about 12 minutes. Allow
cookies to cool for several min-
utes, then loosen from sheet with
a spatula.
Makes 36 cookies.

PINA COLADA BREAD
PUDDING

5 egg whites, slightly beaten
1/2 cup date sugar
6 cups whole wheat bread cubes
(about 9 slices of bread)
1/2 cup raisins
1-20 ounce can crushed
pineapple and natural juice
1-20 ounce can nonfat
evaporated milk
2 teaspoons rum flavoring
1 teaspoon vanilla flavoring
1 teaspoon coconut flavoring
1/2 teaspoon maple flavoring

1. In a large mixing bowl, beat
egg whites. Stir in date sugar,
bread cubes, raisins, pineapple,
milk and flavorings.
2. Place mixture in a 9x 9 x 2
baking pan.
3. Bake at 350 degrees .for 35
minutes.
4. Cut into 16 2 1/4 inch x 2
114 inch squares. •

Topping
1 cup nonfat yogurt
1/4 cup pineapple juice
concentrate
1/4 teaspoon rum extract
1/4 teaspoon coconut extract
1 tablespoon apple juice
concentrate (optional)

Mix all ingredients together.
Add apple juice concentrate for
a sweeter taste. Serve as a gar-
nish over Pina Colada Bread
Pudding.
