SOFT OATMEAL CO OKIE 1 cup whole wheat pastry flour 3 cups rolled oats 2 teaspoons baking powder 1 teaspoon baking soda 1 tablespoon cinnamon 1/4 teaspoon nutmeg 2/3 cup apple juice concentrate diluted with 1/4 cup water 2 tablespoons vanilla 3/4 cup raisins 3 egg whites beaten to a stiff peak 1. Combine dry ingredients in a large bowl. Mix well. 2. Combine the apple juice concentrate/water mixture, vanilla and raisins. Stir into dry ingredients blending well. 3. Fold in beaten egg whites. 4. Drop by heaping table- spoonfuls onto a nonstick cook- ie sheet. Pat down each mound lightly. 5. Bake in a 400 degrees oven for about 12 minutes. Allow cookies to cool for several min- utes, then loosen from sheet with a spatula. Makes 36 cookies.
