ZESTY POTATO KUGEL
(PAREVE)
6 medium potatoes, peeled
2 scallions
1 medium onion
3 eggs, beaten
114 cup matzah meal
4 teaspoons Old Bay Seasoning
1/2 teaspoon salt
6 tablespoons vegetable oil
Note: Instead of 3 eggs, you may
substitute 1 egg and 4 egg
whites.
Preheat oven to 375. Spray a
9-inch square baking dish with
nonstick vegetable spray. In food
processor, grate potatoes. Trans-
fer to a medium bowl. Change to
chopping blade (make sure ma-
chine is turned off— or unplug).
Add scallions and onion and
chop coarsely.
Add to potatoes in bowl. Stir
in eggs, matzah meal, Old Bay
Seasoning, salt and 4 table-
spoons oil. Mix well. Pour mix-
ture into prepared baking dish.
Drizzle with remaining oil. Bake
in preheated oven 1 hour until
nicely browned and firm in cen-
ter. Serves 6 to 8.

roasting pan. Roast in preheat-
ed oven for 2 hours or until nice-
ly browned, tender and juices
run clear when chicken is
pierced in thickest part. Serves

1 cup medium kasha
(buckwheat groats)
1 egg white, lightly beaten
2 cups boiling water
1 medium onion, thinly sliced
1 tablespoon Old Bay Seasoning
1 teaspoon minced garlic
2 tablespoons olive oil
In small bowl, mix kasha with
egg white. Pour into a medium
saucepan. Cook over high heat,
stirring constantly until grains
are separate and dry, 1-2 min-
utes. Add boiling water, onion,
Old Bay Seasoning and garlic.
Cover and simmer 30 minutes,
stirring often. Stir in oil. Serve
hot. Serves 6.
RED CABBAGE AND
NOODLES (PAREVE)
3 tablespoons vegetable oil
1 large onion, chopped
1 pound (1/2 medium) red
cabbage, shredded
1-2 tablespoons Old Bay
Seasoning or to taste
1/2 pound medium noodles,
cooked and drained
2 teaspoons caraway seeds
Heat oil in medium saucepan.
Add onion and saute 10 minutes
or until softened. Add cabbage
and Old Bay Seasoning. Cover
and cook over medium low heat
until cabbage is soft, 15 min-
utes.
