hen I arrived in Paris,
the wonderful aroma of
French bakeries filled
the air of the busy
streets.
Although French cooking is
known around the world for its
wonderful rich sauces, a lighter
cooking style called nouvelle cui-
sine is appearing on many restau-
rant menus in France. Created
for the diet conscious, this cuisine
uses light rather than creamy
sauces, which bring out the tex-
ture and color of the ingredients
with far fewer calories.
CHOCOLATE TRUFFLES
60 Truffles
1 cup 70 percent cocoa chocolate
1 quart cream
114 cup soft butter
1/2 cup dark cocoa powder
1 1/2 cups chocolate topping
Prepare the cream. Chop up the
chocolate. Bring the cream to a
boil. Take away from heat, then
slowly fold in the chocolate and
butter, stirring with a wooden
spatula, until the cream is
smooth.
Prepare the truffles: Cover a
square mold with waxed paper.
Pour one tablespoon of chocolate
cream.
