CHOCOLATE TRUFFLES 60 Truffles 1 cup 70 percent cocoa chocolate 1 quart cream 114 cup soft butter 1/2 cup dark cocoa powder 1 1/2 cups chocolate topping Prepare the cream. Chop up the chocolate. Bring the cream to a boil. Take away from heat, then slowly fold in the chocolate and butter, stirring with a wooden spatula, until the cream is smooth.
