hether you choose to
ring in the new year ca-
sually and cozily at
home or gather with
friends, most cooks are looking
for easy yet innovative ideas to
make the evening special.
Cheese balls are usually first on
my list. I usually make my own,
preparing them a few days in ad-
vance. But you also can "cus-
tomize" a store-bought cheese
ball by pouring some Indian
Chutney or Madras Curry sauce
over the cheese before serving.
Look for these toppings in the
gourmet sec-
tions of most
food stores.
Dips are
my No. 2 se-
lection.
They're sim-
ple to make
from scratch
and easy to serve.
It is said that cer-
tain foods and
snacks are packed
with the nutrients
that stimulate
brain func-
tion and
make you
feel your
best. Among
those on the list are
peanut butter, couscous, crunchy
vegetables with garlic dip and
fresh salsa and chips.
So, what better way to start
the new year? These recipes are
smart and easy choices to serve
for an evening that is usually
longer than most.

INDIAN CHEESE BALL
(DAIRY)
16 ounces cream cheese, room
temperature
1 cup cottage cheese
1 teaspoon curry powder
1 cup finely chopped green
onion, including tops
1 cup dry roasted peanuts
1 cup-raisins__
1/2 cup shredded coconut
3/4 cup mango chutney
Beat cream cheese, cottage
cheese and curry powder to-
gether with electric mixer until
smooth. Beat in remaining in-
gredients except chutney by
hand. Form into a ball and wrap
in waxed paper. Chill at least 6
hours. To serve, place on a plat-
ter and spoon chutney on top.
Surround with pita triangles or
crackers.
CHINESE CHEESE BALL
(DAIRY)
16 ounces cream cheese, room
temperature
1 teaspoon sesame oil
8 ounce can crushed pineapple,
unsweetened, well drained
2 cups toasted pecans, chopped
1/4 cup finely chopped green
pepper
2 tablespoons finely chopped
onion
Beat cream cheese and oil un-
til smooth. Stir in pineapple by
hand. Also by hand, add 1 cup of
the nuts, green pepper and onion.
Shape into a ball. Place on waxed
paper. Roll in remaining nuts.
Wrap tightly in waxed paper. Re-
frigerate at least 6 hours. Serve
with Chinese-style rice crackers
or sesame crackers.
VERY LOW-CALORIE
SPINACH DIP
(DAIRY)
6 ounces plain low-fat
yogurt
1 cup diet mayonnaise
1 package powdered
ranch salad dressing
mix
1 package frozen chopped
spinach, thawed
1-2 packets of artificial
sweetener (optional)
Squeeze out all liquid
from thawed spinach.
Combine with all ingredi-
ents. Chill and serve with raw
vegetables and/or small sesame
breadsticks. Entire dip recipe is
550 calories.
YUPPIE GRAZERS
(PAREVE)
1 loaf whole wheat bread, sliced,
frozen
13 ounces creamy peanut butter
1/2 cup vegetable oil
2 tablespoons sugar
unseasoned breadcrumbs
Remove crusts from bread.
Halve slices horizontally. Cut
each half into 4 pieces vertically.
(This is easier when bread is
frozen.) Bake sticks and crusts
in preheated 250-degree oven un-
til light brown, about 45-60 min-
utes. Crush cooled crusts in
plastic bag using rolling pin.
Heat peanut butter, oil and sug-
ar in top on double boiler. Mix
well. Dip breadsticks, a few at a
time, into mixture. Roll peanut
butter sticks in crumbs. You may
need to add some commercial un-
seasoned breadcrumbs to sup-
plement, if necessary. Stack on
narrow side to dry on a waxed
paper-lined cookie sheet. These
freeze well. Yields about 160.
