A Touch Of Class
The House of Moet & Chandon,
a French wine-maker, describes
the proper way to uncork cham-
pagne. The goal is to achieve
more of a sigh than a pop.
First remove foil and wire
muzzle, instructs the house. A
napkin is just for show, but may
be wrapped around the bottom of
bottle. Hold the base of bottle in
one hand and ease cork out gen-
tly with the other, using your
thumb to keep it from popping.
French cavalry officers, eager
to sample the preferred beverage
of their leader, used to simply
slice off the top of the bottle with
their swords. This, however, is
NOT recommended.
Pour into long, narrow cham-
pagne flutes to show off the
sparkle and bubbles. Fill no more
than half full. Shallow, saucer-
shaped glasses are not appropri-
ate as the bubbles tend to
dissipate quickly.
Sparkling wine and cham-
pagne can be sipped any time —
not just for dessert or celebra-
tions. The sparkling bubbly adds
class to the caviar cocktail hour
or a bagel breakfast, and for the
kosher consumer, there are plen-
ty to choose from.

nil-size unless otherwise noted.

Good quality sparkling wine from
France.
• Baron Herzog Brut, $10. Cal-
ifornia blend of varietals. Good
value and nice presentation.
• Kesser Blush Spumanti, $9.
From New York State. Very good,
delicately sweet blush, Asti type.
• Kedem White Champagne,
$6 From New York State. Extra
dry, fair quality. Fermented by
Charmat process.
• Bartenura Blanc de Blanc
Brut, $10. Italian white sparkling
wine from Pinot grapes. Dry with
refreshing style and flavor. 0
