The goal is to achieve more of a sigh than a pop. First remove foil and wire muzzle, instructs the house. A napkin is just for show, but may be wrapped around the bottom of bottle. Hold the base of bottle in one hand and ease cork out gen- tly with the other, using your thumb to keep it from popping. French cavalry officers, eager to sample the preferred beverage of their leader, used to simply slice off the top of the bottle with their swords. This, however, is NOT recommended. Pour into long, narrow cham- pagne flutes to show off the sparkle and bubbles. Fill no more than half full. Shallow, saucer- shaped glasses are not appropri- ate as the bubbles tend to dissipate quickly. Sparkling wine and cham- pagne can be sipped any time — not just for dessert or celebra- tions.
