Preheat oven to 425. In a skil-
let melt 1 tablespoon of mar-
garine. Saute the onions until
translucent. Put them in a bowl
and let them cool slightly. Add
the egg, sour cream and pepper.
Mix well and set aside.
In another bowl combine the
flour and baking powder. Cut in c:
the remaining margarine until
mixture is very crumbly. Stir in
1/2 cup of shredded cheese. Add
the milk and stir to make a soft
dough. Pat the dough into a
greased 9X9 square pan. Spread
the sour cream mixture on top.
Sprinkle the remaining cheese
and parsley on top. Bake for 25
minutes. Cut the bread into
squares and serve immediately.
Serves 8 to 10.

SKY HIGH VEGETABLE
PIE

1 cup shredded cheddar cheese
2/3 cup milk
3 tablespoons minced fresh
parsley

1 package stuffing mix (any
flavor)
1 egg, beaten
1 medium onion, chopped
1 tablespoon butter or
margarine
1 10 package frozen chopped
spinach, thawed and drained
2 cups mozzarella cheese
1 small red pepper cut into strips
4 eggs slightly beaten
2 tomatoes, sliced

Preheat oven to 400. Prepare
stuffing mix as per the instruc-
tions on the box and then add 1
egg. Press the mixture into the
bottom of a greased 8 inch spring
form pan. Set aside.
In a skillet saute the onion in
the butter until tender. Remove
from the heat and stir in the
spinach. Set aside. Sprinkle 1/2
the cheese over the crust. Spread
112 the spinach mixture over the
cheese. Arrange the peppers over
the spinach mixture. Sprinkle
the remaining cheese over the
peppers and top with the re-
maining spinach mixture. Pour
the beaten eggs over the top of
the spinach and let set in for 2 to
3 minutes. Arrange the tomatoes
across the top in any design you
like.
Bake uncovered for 40 to 50
minutes or until set. Serves 6 to
8. Do not double. O
