(Tomatoes are easily skinned
by immersing them in boiling
water for 10 seconds. Remove
with slotted spoon. Skins will
slip off.)
Saute onions, garlic, shallots
and herbs in olive oil until onions
are transparent, about 3 to 4
minutes.
Add fresh and canned toma-
toes. Cook for 5 minutes at full
heat.
Lower heat and continue
cooking until sauce has reduced
by one-third.
Add seasonings. Cook for
about 1 1/2 hours, stirring occa-
sionally. Leave chunky; do not
grind or blend.
This sauce may be made in
large quantities and frozen (af-
ter cooling) in zip-top bags for
later use. Microwave or place in
refrigerator to thaw.
Makes 14 servings, 1/2 cup
each. (40 calories per serving)

2 teaspoons minced garlic
1/2 cup minced shallots
1 tablespoon chopped fresh
thyme
1 teaspoon chopped fresh
rosemary
1 tablespoon chopped fresh
oregano
2 tablespoons chopped fresh
basil
5 tomatoes, skinned, seeded and
diced
1 can (32 ounces) whole
tomatoes
1 tablespoon creole seasoning
1 tablespoon garlic and herb
seasoning
1 can (20 ounces) unsweetened,
crushed pineapple
1 envelope unflavored gelatin
1 1/2 cups nonfat plain yogurt
3 tablespoons honey
2 teaspoons lemon juice
1 teaspoon vanilla
1 cup fresh strawberries
1 cup ripe mashed bananas
Drain pineapple, reserving
juice. Set fruit aside. If needed, c_/
add unsweetened apple or white -\
grape juice to reserved juice to
make 3/4 cup. Pour into
saucepan. Add gelatin and heat,
stirring to allow gelatin to dis-
solve. Remove from heat and
chill until partially set (like the
consistency of unbeaten egg
whites). Whip partially set
gelatin with electric mixer until
fluffy.
Set aside 1/3 cup pineapple
and 3 whole strawberries.
Slice remaining strawberries.
Mix together yogurt, honey,
lemon juice and vanilla. Fold in
remaining pineapple, sliced
strawberries and mashed ba-
nana. Fold into whipped gelatin
mixture and pour into cooled
Healthy Graham Crust. Recipe
below. Chill until firm.
Cut remaining strawberries
and use with reserved pineap-
ple as garnish just before serv-
ing.
