in light syrup, drained,
syrup reserved
1/2 cup framboise (brandy) or
cognac
1 cup cream or homogenized milk
pinch of freshly grated nutmeg

Melt butter in flaming pan of chaf-
ing dish over direct heat, but do
not brown. Saute drained peach
slices, and when thoroughly heat-
ed, add framboise or cognac and
blaze. Serve peaches in individual
dishes. Leave sauce in pan. Pour
in 3 tablespoons canned peach
syrup, and add small amount of
additional butter if needed.
Bring to a boil, add cream or
milk, and stir constantly until
sauce reaches desired degree of
thickness. Spoon over sliced peach-
es. Add nutmeg. Serves 2 to 3.

APPLES FLAMBE

6 sweet apples
2 tablespoons lemon juice
6 tablespoons granulated sugar
cinnamon sticks, broken
1 dozen whole cloves
dash of vanilla extract
1/2 cup bourbon or rum

Peel, core, and quarter apples. In
a flaming pan of chafing dish over
direct heat, place apples in mix-
ture of lemon juice, sugar, sever-
al broken cinnamon sticks, cloves,
vanilla extract, and 1/4 cup bour-
bon or rum. Simmer covered un-
til apples are tender. Warm
remainder of bourbon or rum,
pour into apples, and blaze. Serve
apples with hot sauce. Serves 4.

1/2 cup milk
1/2 cup sifted all-purpose flour
3 eggs
1 teaspoon granulated sugar
pinch of salt
1 large apple
2 tablespoons butter
1 tablespoon honey
ground cinnamon
lemon juice
1/3 cup bourbon

Prepare batter by mixing milk,
flour, eggs, sugar, and salt in mix-
ing bowl. Pare apple, remove
seeds, slice, and saute with butter
and honey in large iron skillet.
Butter should thoroughly coat bot-
tom and sides of pan. Pour in bat-
ter and place pan in hot 425
degree oven.
When pancake has risen and is
nearly done (approximately 10 to
12 minutes), powder with addi-
tional sugar and cinnamon. Dot
with additional butter, return to
oven, and bake until brown. Im-
mediately before serving, sprinkle
a little lemon juice on pancake.
Warm bourbon, ignite, and ladle
flaming into skillet. Serves 4.
