and lemon juice. Mash in rasp-
berries and whisk again. Season
to taste with pepper. Drizzle over
greens or serve in small pitcher.
Serve with Turkeyburger and
Pan-Roasted Potato Wedges.

t's a safe bet that what-
ever bookstore you wander
through, you'll find at least
half a dozen cookbooks on
cooking for one and two. Recipes
are usually for two servings with
the advice — freeze one or use it
for the next day's lunch.
Whether you're an occasional
solo diner, or it's home alone most
evenings, the same meal the next
day is definitely uninspiring. And
thawing a frozen food package
may be fast, but the tantalizing
aromas you get from cooking
from scratch — albeit with the
help of canned, frozen or sauced
— is totally absent.
Here's help, quick and easy, for
single servings. The recipes that
follow are strictly one-time dish-
es; each comes with quick, health-
ful menu suggestions, to round
out the meal; and should you de-
cide to cook for two, just multiply
the ingredients.
Unless you're doing some bak-
ing, this method works out fine
with most recipes. Most local su-
permarkets have their own bak-
ery on-site and it's easy to pick
up fresh baked goods as needed
from the tempting variety.
Supermarkets finally are rec-
ognizing that all households do
not fit neatly into the mold of two
adults, two children. You'll find
fresh vegetables, trimmed and
ready to eat in small packages,
baby salad greens to measure out
in whatever amount you choose
(and remember that although $6
to $7 per pound may seem ex-
pensive, these greens are light-
weight and you get a lot for your
money).
The recipes below are just a
springboard for your own cre-
ativity and taste. Only one palate
to please — and no leftovers.

BABY GREENS WITH
RASPBERRY
VINAIGRETTE (PARVE)

2 cups baby greens, washed
1 tablespoon toasted sesame
seeds
1 tablespoon vegetable oil
2 tablespoons lemon juice
2 tablespoons fresh raspberries
fresh ground pepper

In a salad bowl, toss greens

SPRINGTIME
GAZPACHO (DAIRY)
1 cup mixed vegetable juice (e.g.,

V-8)
2 teaspoons prepared pesto
1 tablespoon Vidalia onion, diced
1/2 tomato, diced
1-inch piece cucumber, unpeeled
and diced
1 teaspoon feta cheese, crumbled
(optional)

Combine vegetable juice and
pesto. Pour into soup bowl. (May
be refrigerated at this point for
as long as you have time.) Com-
bine onion, tomato and cucum-
ber and spoon into juice mixture.
Sprinkle feta cheese on top. Serve
at room temperature or chilled
with Lemon Broiled Halibut,
Grilled Veggies and crusty roll.

ALMOST INSTANT
SALMON CHOWDER
(DAIRY)

1 1/4 cups milk
1/2 cup cooked potato, diced
113 cup cooked salmon, flaked
salt and white pepper to taste
1 tablespoon chopped chives

In small saucepan, heat milk.
Stir in potatoes and salmon and
heat through. Season to taste
with salt and pepper. Sprinkle
with chives. Serve hot with bread
sticks and fresh fruit.

BEEF-VEGETABLE SOUP
(MEAT)

1/8 small onion, sliced
1 teaspoon vegetable oil
2 oz. cooked beef, diced
1/3 cup frozen mixed vegetables
1 cup beef broth
1 tablespoon chopped parsley

In small saucepan, saute onion
in oil over medium heat until
transparent. Add beef and mixed
vegetables and cook 2 to 3 min-
utes to thaw vegetables. Add beef
broth and heat through. Stir in
parsley. Serve hot with garlic
bread and crisp lettuce wedge.

TURKEY-BEEF BURGER
(MEAT)

3 oz. ground turkey
3 oz. ground beef
3 tablespoons barbecue sauce
2 teaspoons parve breadcrumbs
or matzoh meal
1 tablespoon fresh parsley sprigs

Preheat broiler or broiler in
toaster oven. Spray baking sheet
with non-stick vegetable spray.
In small bowl, combine turkey,
beef, 1 tablespoon barbecue
sauce, breadcrumbs and parsley.
