pan. Sprinkle 3 to 4 tablespoon
of the bread crumbs in and coat
the pan. Leave the excess
crumbs on the bottom. Turn the
batter into the pan. Bake un-
covered at 375 for 1/2 hour.
Dredge the tomato pieces in the
remaining bread crumbs. Re-
move the cheesecake from the
oven and decorate the top with
the tomatoes. Return he cake to
the oven and reduce the heat to
350 and bake an additional 30
to 40 minutes. Turn off the oven,
open the door and leave the cake
in there for 15 minutes. Let cool
10 to 15 minutes, out of the oven,
and then serve. Serves 6 to 8.

Preheat oven to 350. Lightly
saute mushrooms and onions in
butter and lemon juice. Set aside.
In the same pan saute the gar-
lic and cauliflower. Add the basil
and salt and pepper. Combine all
the ingredients together in a bowl
and mix well. Pour mixture into
a greased baking dish. Bake cov-
ered for 112 hour.

1 cup chocolate sandwich cookie
crumbs
3 tablespoons margarine, melted
1 envelope unflavored kosher
gelatin (Kolitin is the best)
1/4 cup cold water
2 8-ounce containers, soft cream
cheese
1/2 cup sugar
1/2 cup milk
1/4 cup crushed peppermint
candy
1 cup whipping cream, whipped
3 ounces finely chopped milk
chocolate
whipped cream for garnish
chopped peppermint candy for
garnish

Combine the crumbs and mar-
garine together. Press into the
bottom of a 9 inch spring form
pan. Bake at 350 for 10 minutes.
Cool. Soften gelatin in water. Stir
over low heat until dissolved. In
a mixer, combine cream cheese
and sugar. Mix at medium speed
until well blended.
Gradually add gelatin, milk
and peppermint candy, mixing
until well blended. Chill until
thickened but not set. Fold in
whipped cream and chopped
chocolate. Pour over crust and
Chill until firm. Garnish with ad-
ditional whipping cream com-
bined with the crushed
peppermint candy. Serves 10 to
12.

Preheat oven to 375. In a colan-
der, set the zucchini, sprinkle
lightly with salt and drain for 15
minutes. Squeeze out excess
moisture.
In a large skillet, saute the
onions in the butter. After sever-
al minutes add the garlic, carrots,
zucchini, flour and herbs. Keep
stirring and cook over medium
heat for 8 to 10 minutes. Remove
from heat and stir in parsley and
lemon. Beat together cheeses
and eggs (use an electric mixer
if possible) Mix until very well
blended. (Use a big bowl). Add
the sauted vegetables and mix
well, season to taste with pep-
per and more salt if necessary.
