Reserve 1/2 cup of the moz-
zarella cheese and 1/2 cup of the
Parinesan cheese. Mix all the
above ingredients in a bowl, ex-
cept the matzot. Grease a 9- by
13-inch deep-dish pan and place
some of the tomato mixture in
the bottom. Place two pieces of
matzot over the sauce, side by
side, and top the matzot with 113
cup of the cheese mixture, and
top with some (1 cup) of the
sauce. Repeat the layering and
end with the tomato sauce. Top
with reserved mozzarella cheese
and Parmesan cheese. Place in
a preheated 350-degree oven for
about 45 minutes. Let cool for
about 15 minutes and serve with
extra sauce on the side. Yields 6
servings.

Begin by wrapping your broil-
er pan with aluminum foil; light-
ly coat with vegetable spray and
set aside. In a small bowl, com-
bine cinnamon and sugar and
set aside. Now, take your 4
pieces of dry matzoh and gener-
ously butter both sides and gen-
erously - sprinkle with
cinnamon/sugar mix, making
sure to cover the entire matzot.
Place your coated matzot onto
broiler pan and arrange your
sliced bananas on top of matzot.
Sprinkle tops of matzot with
some more cinnamon/sugar mix-
ture, top with toasted almonds
and then drizzle with honey.
Bake in broiler for approxi-
mately 3 to 4 minutes. Yields 5
