garlic powder (about a teaspoon)
freshly ground black pepper
(about 1/2 teaspoon)
Glaze:
1/2 pound dried apricots
1/3 cup honey
1/4 cup apple-cider vinegar

Preheat oven to 450 degrees.
Clean the duck carefully and re-
move pinfeathers. Pat dry and rub
inside and out with garlic powder
and pepper. Place breast side
down on a roasting rack in a roast-
ing pan. Turn the oven down to
350 degrees and roast uncovered
until done, between 1 1/4 hours
and 2 hours.
Place apricots in a saucepan
and cover with water. Bring to a
boil over a medium flame and cook
for 10 minutes. Cool. Puree the
apricots and their cooking liquid
in a blender or food processor with
the steel blade attachment. Add
the rest of the ingredients and
blend for a few seconds.
Prepare Roast Duck as de-
scribed. Before placing the duck
in the oven, brush it with half the
apricot glaze. Roast for half the
cooking time. Remove from the
oven and brush the duck with the
remaining glaze. Return it to the
oven and let it finish preparing it-
self to be eaten. Cut and serve.
Four servings.
