POACHED PEAR SALAD
WITH CHEESE AND
PORT VINAIGRETTE
1 whole fresh pear, peeled and
cored
2 cups port wine
1 cup orange juice
2 each large thyme sprigs (dried
thyme leaves may be used)
1 tablespoon minced shallots
1 tablespoon minced garlic
2 ounces olive oil
1 pound Arugula-cleaned and
washed
4 ounces grated cheese
salt and pepper to taste
Poach the pear in port wine, or-
ange juice and with thyme sprig
for about 25 minutes. Remove
the pear and chill. Continue to
let the poaching liquid simmer
until it has reduced by half.
Mince the remaining thyme
sprig and add it along with the
shallots, garlic and olive oil to the
port wine reduction. Season to
your taste and refrigerate at
least 2 hours.
Presentation: Thinly slice the
poached pear. Toss pear slices,
arugula and port vinaigrette to-
gether. Divide the salad between
4 plates and sprinkle the grated
cheese on top.
Serves 4.

ARUGULA WITH
RASPBERRY
POPPYSEED
VINAIGRETTE
3 tablespoons raspberry.vinegar
1 tablespoon sugar
1 teaspoon Dijon mustard
2 tablespoons chopped red onion
1/4 teaspoon salt
1/2 cup vegetable oil
1 tablespoon poppy seeds
3 cups arugula leaves
2 pears, thinly sliced
Garnish:
toasted cashews or pecans,
chopped
In a blender or food processor,
combine vinegar, sugar, mustard
onion, and salt. Process until
mixed. In a steady stream, add
oil until combined. Stir in poppy
seeds. If not using immediately
store in refrigerator. Shake very
_ well before using.
Serve over arugula and sliced
fresh pears. Garnish with toast-
ed chopped nuts.
Four servings.
LIME DILL DRESSING
2 tablespoons lime juice
1 tablespoon vinegar
1/2 teaspoon sugar
1/2 teaspoon dry mustard
2 teaspoons coarsely ground dill
seed
1 tablespoon mayonnaise
1/3 cup olive oil
salt and freshly ground pepper
to taste
Blend together all ingredients
except olive oil, salt and pepper;
add oil in a steady stream, blend-
ing until thoroughly combined.
Add salt and pepper to taste.
Makes about 112 cup dressing.
