POACHED PEAR SALAD WITH CHEESE AND PORT VINAIGRETTE 1 whole fresh pear, peeled and cored 2 cups port wine 1 cup orange juice 2 each large thyme sprigs (dried thyme leaves may be used) 1 tablespoon minced shallots 1 tablespoon minced garlic 2 ounces olive oil 1 pound Arugula-cleaned and washed 4 ounces grated cheese salt and pepper to taste Poach the pear in port wine, or- ange juice and with thyme sprig for about 25 minutes. Cystic Fibrosis Foundation ARUGULA WITH RASPBERRY POPPYSEED VINAIGRETTE 3 tablespoons raspberry.vinegar 1 tablespoon sugar 1 teaspoon Dijon mustard 2 tablespoons chopped red onion 1/4 teaspoon salt 1/2 cup vegetable oil 1 tablespoon poppy seeds 3 cups arugula leaves 2 pears, thinly sliced Garnish: toasted cashews or pecans, chopped In a blender or food processor, combine vinegar, sugar, mustard onion, and salt. Process until mixed. In a steady stream, add oil until combined. Stir in poppy seeds. If not using immediately store in refrigerator. Shake very _ well before using.
