To make the vinaigrette:
In a small bowl whisk togeth-
er the red wine vinegar, honey,
walnut bowl, salt and pepper.
To prepare the figs: If you're
using fresh figs, cut them into
quarters. If dry figs are used, cut
them into 10 to 12 small pieces.
To assemble:
Combine the figs, spinach, or-
anges and onions. Toss with the
vinaigrette and serve.

In a stainless-steel bowl combine
the flour, eggs, melted butter,
baking powder and milk. Mix
well. Add the corn and black
beans. Season the batter with
salt and pepper.
To cook the pancakes:
Heat in a non-stick Teflon-
style griddle pan. When it's hot,
spoon out enough mixture for a
3-inch cake_you can probably
cook 4 at a time. When the bat-
ter bubbles slightly and is well
browned, turn and brown the
other side. It should take no
more than 1 minute of cooking
overall. Finish the rest of the
batter in this manner.
To assemble and serve:
Place 2 Corn and Black Bean
Cakes in the center of each plate
and top with a generous serving
of Smoked Salmon Salsa.
Serves 6.

1/2 pound smoked salmon, diced
fine
1/4 cup finely diced red onion
3 tablespoons chopped fresh
cilantro
3 tablespoons chopped fresh
flat-leaf parsley
4 tablespoons diced jalapeno
2 tablespoons extra-virgin olive
oil
To prepare the salsa:
In a bowl combine the smoked
salmon, red onion, cilatro, pars-
ley and jalapeno. Toss together
carefully, add the olive oil, toss
again, and cover. Let this salsa
set for 30 minutes before serv-
ing.
Serves 6.
