Heat 1 to 2 table-
spoons oil in a skil-
let. Add the beaten
egg and cook, mak-
ing a thin omelete.
Remove from pan,
cool and slice into
strips. Set aside.
Cook noodles ac-
cording to package di-
rections and drain. Toss with 1
tablespoon of oil and cover to
keep warm. Place the chicken in
a bowl and sprinkle with the
wine, soy and corn starch. Let
stand 10. minutes. Combine
mushrooms, celery, beans, we
ter chestnuts, onion, garlic and
ginger in a bowl. Mix thorough-
ly. In the skillet, heat 2 table-
spoons of oil and add the chicken.
Cool approximately 5 minutes,
stirring constantly. Remove the
chicken and keep it warm. Add
2 to 3 tablespoons of oil to the
pan and saute the vegetable mix <
ture. Cook until the vegetables
are tender. Remove vegetables
from pan. Add 2 tablespoons of
oil to the pan and cook the noo-
dles until warm throughout. Add
the chicken and vegetables and
heat until warm throughout.
Serve and garnish with omelette
strips. This dish can be made'
ahead of time and lightly heated
in the microwave. You can also
keep the chicken breasts whole
instead of cutting them up and
then you can serve the chicken
breast on top of the noodles.
Serves 8 to 10.

NOODLE PANCAKES

12 ounces fine noodles
3 to 4 large eggs
medium small onion
tarragon to taste
salt and pepper to taste
oil for frying

age. Drain and add to the egg
mixture. Blend once, just turn it
on and then off. Just enough to
mix everything up. Season to
taste. Heat oil in skillet. Drop
noodle mixture from a large
spoon into hot oil. Brown on
medium heat on both sides.
Drain on paper toweling. This
freezes well. Makes 15 to 16 pan-
cakes. To reheat place in a sin-
gle layer on foil lined baking
sheet. Bake uncovered at 425 de-
grees 10 minutes or until crispy,

drained very well
