Combine mushrooms, celery, beans, we ter chestnuts, onion, garlic and ginger in a bowl. Mix thorough- ly. In the skillet, heat 2 table- spoons of oil and add the chicken. Cool approximately 5 minutes, stirring constantly. Remove the chicken and keep it warm. Add 2 to 3 tablespoons of oil to the pan and saute the vegetable mix < ture. Cook until the vegetables are tender. Remove vegetables from pan. Add 2 tablespoons of oil to the pan and cook the noo- dles until warm throughout. Add the chicken and vegetables and heat until warm throughout. Serve and garnish with omelette strips. This dish can be made' ahead of time and lightly heated in the microwave. You can also keep the chicken breasts whole instead of cutting them up and then you can serve the chicken breast on top of the noodles. Serves 8 to 10.
