1 1/2 c. slightly crushed corn
flakes

Cut each apple quarter into 3
slices. Spread cut sides of apple
with peanut butter and then roll
it in corn flakes.

"CRUNCHY" FARMERS
SALAD

1/2 lb. fresh bean sprouts,
blanched
6 T. oil
2 T. rice wine vinegar
2 t. soy sauce
1 T. brown sugar
salt and pepper to taste
1 medium cucumber, diced
1 medium tomato. seeded and
chunked
1/2 lb. mushrooms, sliced
1/2 to 2/3 c. GRAPE NUTS
1 to 2 c. torn leaf lettuce

Mix oil, vinegar, soy sauce,
and brown sugar together. Sea-
son to taste with salt and pep-
per. Set aside. Combine
remaining ingredients in a large
salad bowl and toss well. Driz-
zle dressing over salad. Toss
lightly and serve.

MACADAMIA STUFFED
MUSHROOMS
1 lb fresh mushrooms

1/3 c. butter or margarine
1/3 c. chopped onions
1 c. crushed SPECIAL K
1/3 c. chopped macadamia nuts
3 T. chopped parsley
3 T. shredded Monterey Jack or
Cheddar cheese
1/4 t. salt
1/8 t. black pepper

Preheat oven 350. Remove
the mushroom stems. Chop and
set aside. Melt the butter and
brush the outside of the caps
with it. Place caps in a greased
baking dish. Take remaining
butter and saute onions and
chopped stems until they are
tender, about 10 minutes. Re-
move from heat. Add SPECIAL
K, nuts parsley, cheese, salt and
pepper. Mix well. Spoon about 1
T. of the mixture into each cap.
Bake 10 to 12 min. until mush-
rooms are tender. Approx. 20
mushrooms.
