How Do You

peanuts. Add 3 to 4 tablespoons
of mayonnaise, mix well and then
add the sugar, onion powder and
season to taste. Mix well. Spread
2 of the slices of bread lightly with
the mayonnaise. Divide the chick-
en mixture between the two
pieces of bread that do not have
the mayonnaise on them. Top the
chicken mixture with lettuce, if
desired, and place the remaining
bread slices, with the mayonnaise
side down, on top. Makes 2 sand-
wiches. Can be doubled or tripled.

SUNSHINE TUNA
1 can white or light tuna, drained

1/2 cup seedless grapes, cut in
half
1 stalk of celery, chopped
1 carrot, shredded
2 tablespoons slivered almonds,
optional
3 tablespoons plain yogurt
2 tablespoons mayonnaise
2 to 3 tablespoons orange juice
salt and pepper to taste
lettuce leaves, optional
2 pita pocket breads

In a medium bowl combine the
yogurt, mayonnaise, and orange
juice. Mix well. Combine the re-
maining ingredients, except the
pita and lettuce, and mix well.
Cut a slice off the top of the pita
and open to fill. Place a piece of
lettuce on one side of the pita and
divide the tuna mixture between
the two pitas. Makes 2 servings.
Can be doubled.
