Steve Allen, Golden
Mushroom I enjoy a cool
and refreshing dry white wine
or a hearty, thristy Merlot. My
favorite dip would be a wasabi
sauce — a Japanese horserad-
ish served with tempura rock
shrimp. It's very zippy.



Marco Conte, Marco's —
I find a Compari and soda
with an orange twist as very
light and refreshing. For me,
it's a thirst quencher and a
great summertime drink. I en-
joy a fresh red bell pepper and
tomato salsa with roasted gar-
lic served with tortilla chips or
a nice crusty bread. It's fantas-
tic. Peppers and roasted garlic
add a certain sweetness to this
dip.

Vince Bassonetti, Cafe
Cortina My favorite drink
is beer, no matter what time of
the year. I like Heineken beer
and my next favorite is Bud-
weiser. For a dip, I would say a
simple onion dip prepared
with Mascappo cheese (an Ital-
ian cheese) instead of cream
cheese and served with a crus-
tini sprinkled with cheese and
toasted.



Keith Supian, Van Dyke
Place In the summer
months, I prefer a Sea Breeze.
I just like the combination of
vodka, cranberry and grape-
fruit juices. For a dip, I like
baba ganoush. I like the roast-
ed flavor of the eggplant. I
serve it with small pita bread.
This dip is bite-sized, easy, not
messy, and has a good flavor.



Marty Will Excalibur —
I would say that a nice glass of
freshly squeezed lemonade is
what I enjoy during the sum-
mer months. A dip I prefer is a
California-style avacado salsa
with lots of tomatoes and
onions with avacado and some
peppers. It goes well with tor-
tilla chips or fresh flat bread or
matzah crackers.

Club My favorite sip is

cranberry juice with lime and
tonic water, with sweet fruit
as a garnish. My favorite dip is
a nice homemade salsa. I fire-
roast a variety of peppers and
eggplant, combine them with
olive oil and vinegar, and then
I season it with herbs such as
cilantro or chives or thyme and
fresh pepper. It's a very hearty
dip. It requires something
hearty to handle it, such as a
corn tortilla chip.

Ed Janos, City Grill I
like a Pirrun's cocktail, which
uses Pimm's aperitif (from
England), soda, and is gar-
nished with a cucumber. It's
slightly astringent — dry on
the palate and refreshing. I
also like Compari and soda
with lemon. My favorite dip is
... in the pool, buck naked. My
second favorite dip is gua-
camole — pretty common-
place, but I enjoy it made
fresh, with lime juice, ripe ava-
cado, red onions, garlic and
peppers.



Brian Polcyn, Acadia I
like a crisp, light, white wine
— a California Gewurztramin-
er. For a dip, I like an avacado
dip made with cilantro, lime
and avocado. You've got the
wholesome vegetables to dip
with, and the avacado pro-
vides all the fat.



Aldo Ottaviani, Andiamo
Italia I like a cocktail Ne-
groni. It is made with Corn-
pari, gin and whiskey. It's very
refreshing. The dip I like is a
goat cheese dip. You put the
cheese in a mixer until it is
soft, add chopped dill and eat
it with crackers.



Chris Thompson, Joe
Muer's I like a Tequila
Sunrise, which is made with
tequila, grenadine and orange
juice. I make a great avacado
clip served with grilled, cold
shrimp. I use fresh avocados,
lemon juice, Tabasco sauce,
salt and pepper and sour
cream.
