Combine egg, sugar, milk and
shorting. Add 1 cup flour sifted
with salt and baking powder. Mix
well. Place in a greased 8 x 8 inch
pan. Sprinkle the blueberries
over the kuchen dough. Mix 3/4
cup of flour and 1/2 cup of sugar.
Cut in butter until crumbly. This
is Streusel. Sprinkle over berries.
Bake at 375 F for 25 minutes.

BLUEBERRY SOUR
CREAM COFFEE CAKE

1 package Duncan Hines muffin
mix
1/4 cup milk
1/4 cup blueberry preserves

GLAZE:
1/2 cup confectioners sugar
113 cup sour cream
1 egg
21/2 tsp. water

Combine berries, 1/2 cup wa-
ter and lemon juice in a
saucepan. Bring to a boil; simmer
gently for about 8 minutes, stir-
ring frequently. Soak gelatin in
1/4 cup water. Remove berries
from heat; add gelatin and arti-
ficial sweetener and mix well to
dissolve. Pour into small hot jars;
cover and allow to cool. Store in
refrigerator. Yield: 1 1/2 cups.

1 quart blueberries
1/2 cup sugar
1 Tbs. cornstarch, dissolved in 2
Tbs. cold water
1/2 tsp. grated lemon rind
1 tsp. lemon juice
1/4 tsp. cinnamon
1 cup flour
1 Tbs. sugar
1 1/2 tsp. baking powder
2 tsp. grated orange rind
1/4 tsp. salt
3 Tbs. shortening
113 cup milk
1 egg

Preheat oven to 375 F. Grease
