The secret to making these sa-
vory appetizer pancakes in 10
minutes instead of in several
hours in using canned black
beans. If you can, buy a brand
that's seasoned with salt and
onions. Garnish with dollops of
sour creams and salsa.

1 can (15 ounces) black beans
1/4 cup flour
1 egg
1/4 teaspoon salt
1/2 cup sour cream
1/2 cup salsa

Peel the carrots and shred
them in the food processor fitted
with the finest shredding disk.
Mince the garlic.
Heat the oil in a large frying
pan over medium-high heat. Add
the garlic and saute until soft and
fragrant, about 30 seconds. Stir
in the carrots and season with
salt. Cook, stirring occasionally,
until the carrots soften and turn
bright orange, about 6 minutes.
Remove the carrots from the
heat.
Fold the yogurt into the car-
rots. Serve warm or chill and
serve cold. Makes 2 cups.

Drain the beans and place
them in a food processor. Process
until smooth, about 1 minute;
scrape down the sides of the bowl.
Add the flour, egg and salt and
process 30 seconds, until well
blended.
Preheat a nonstick or lightly
oiled griddle. Make pancakes us-
ing 1 tablespoon of batter for each
and spreading the batter our
slightly with the back of a spoon
to about 2 inches in diameter.
Cook in batches over medium-
high heat until the bottom is
brown and a few bubbles appear
on top, about 2 minutes. Turn the
pancakes over and cook until the
other side is lightly browned, 1 to
2 minutes. Garnish with dollops
of sour cream and salsa. Makes
4-6 servings.

ZESTY GARLIC BREAD

1 stick (1/2 cup) butter
1/4 cup finely chopped parsley
1 tablespoon minced garlic
3/4 teaspoon crushed hot red
peper
1 loaf (1 pound) French bread

Preheat the broiler. Melt the
butter in the microwave oven on
High for about 1 minute. Stir in
the parsley, garlic and hot pep-
per.
Slice the bread in half hori-
zontally. Brush or spoon the gar-
lic butter over the cut sides of the
bread. Place the bread on a bak-
ing sheet and broil 3 to 4 inches
from the heat about 3 minutes,
until nicely toasted.Cut into f-
inch pieces and serve. Makes 4-6
servings.
