Mince the garlic. Heat the oil in a large frying pan over medium-high heat. Add the garlic and saute until soft and fragrant, about 30 seconds. Stir in the carrots and season with salt. Cook, stirring occasionally, until the carrots soften and turn bright orange, about 6 minutes. Remove the carrots from the heat. Fold the yogurt into the car- rots. Serve warm or chill and serve cold. Makes 2 cups. ZESTY GARLIC BREAD 1 stick (1/2 cup) butter 1/4 cup finely chopped parsley 1 tablespoon minced garlic 3/4 teaspoon crushed hot red peper 1 loaf (1 pound) French bread Preheat the broiler. Melt the butter in the microwave oven on High for about 1 minute. Stir in the parsley, garlic and hot pep- per. Slice the bread in half hori- zontally. Brush or spoon the gar- lic butter over the cut sides of the bread. Place the bread on a bak- ing sheet and broil 3 to 4 inches from the heat about 3 minutes, until nicely toasted.Cut into f- inch pieces and serve. Makes 4-6 servings.
