lic over green pepper halves, then
sprinkle lightly with fresh ground
pepper. Sprinkle kosher salt over
red pepper halves, then lightly
with fresh ground pepper. Sprin-
kle capers over yellow pepper
halves. Place on middle rack of
preheated oven and roast for 7 to
8 minutes. Scatter basil over pep-
pers, cover tightly with foil. Re-
duce heat to 375 degrees and
continue roasting for 15 to 20
minutes longer or until peppers
are softened and colors are still
bright. Garnish • with lemon
wedges to squeeze over peppers
before eating. Serv.3chilled or at
room temperature. Serves 4 as
an appetizer.
Note: To speed up cooking, slip
under broiler to brown slightly,
about 3 minutes. Transfer to mi-
crowave dish and cover loosely
with plastic wrap. Cook at high
power for 5 minutes or until pep-
pers are softened. Serve as above.

NEW AGE CHEFS SALAD
(adapted from a recipe
from Florida Department
of Citrus) (Dairy)

8 to 10 cups torn salad greens
(romaine, bibb lettuce, red leaf
lettuce)
4 ounces reduced fat cheddar
cheese, cut in 1/2-inch dice
6 ounces canned or cooked tuna
fish, cut in 1/2-inch chunks
2 medium white grapefruit,
peeled and sectioned
12 cherry tomatoes, halved
2 ounces goat cheese, crumbled
1/2 medium cucumber, unpeeled
and thinly sliced

In 4 individual salad bowls or
plates, evenly divide and arrange
greens, cheddar cheese, tuna fish,
grapefruit and cherry tomatoes.
Scatter goat cheese over and
arrange cucumber slices around
edge of each plate. Serve with
Melba Toast and pass Creamy
Cucumber Dressing. Serves 4

CREAMY CUCUMBER
DRESSING (Courtesy

Citrus) (Dairy)

1/2 cup calorie reduced
mayonnaise
1/2 cup light sour cream
1/2 cup finely chopped cucumber
1 chopped green onion
3 tablespoons skim milk
1 tablespoon chopped fresh dill
or 1 teaspoon dried dill
1/4 teaspoon garlic salt
Mix all ingredients in small

bowl. Serve at room temperature.
Serves 4
