BAKED APPLES WITH
SPICED SWEET
POTATOES (PARVE)

6 firm Golden Delicious apples
Per apple:
1/2 teaspoon sugar
1/8 teaspoon grated lemon rind
1 1/2 teaspoons margarine, room
temperature
Filling:
2 medium-large sweet potatoes,
cooked, peeled and mashed
3 tablespoons margarine
salt to taste
1/8 teaspoon nutmeg
1 teaspoon cinnamon
2 tablespoons non-dairy cream
2 tablespoons brown sugar
1/4 cup chopped pecans, optional
1/4 cup raisins, optional
6 marshmallows

Wash and core apples without
cutting all the way
through. Cut a
slice off bottom
of each, if nec-
essary, so it will
sit firmly. Peel
1/3 down sides.
Make foil cups to
cover bottom half
of apple and shape to
fit. Place in 11-by-7-inch shallow
pan. Fill centers of apples with
the sugar, rind and butter. Put 6
tablespoons water in bottom of
baking pan. Bake uncovered, in
preheated 400-degree oven until
tender, basting often. After 35
minutes, poke apples with a
straw or press gently to see if they
are done. Do not overbake. In a
mixing bowl, beat mashed pota-
toes until fluffy. Add margarine,
salt, nutmeg, cinnamon, cream
and brown sugar. Beat until well
mixed. Fold in pecans and
raisins. Fill each apple with sweet
potato mixture and top with a
marshmallow. Place under broil-
er to just toast marshmallows.
Makes 6 servings.

Sprinkle with almonds
chocolate, divided
and remaining 1/2 cup
1 ready-to-use graham
white chocolate.
cracker crumb crust
BAKE at 350°, 40 minutes
(6 oz. or 9 inch)
or until center is almost
1/2 cup chopped almonds
set. Cool. Refrigerate
3 hours or overnight.
