Drain the cabbage from the
water. Place meat, onion and gar-.
lic in food processor bowl. Process
briefly. Add the egg substitute,
bread crumbs, stock, salt and
pepper and process again, just
until ingredients combine. Divide
the meat mixture into 15 parts.
Place a portion of the meat in the
center of a cabbage leaf Fold in
the sides and turn, like wrapping
a package. Repeat this process
with the rest of the meat and
leaves.
Line a pot with a tightly fitting
lid with some of the torn or too
small cabbage leaves. Sprinkle
with sliced garlic and 1/2 cup no-
fat stock. Arrange the prepared
rolls in the prepared pot. Com-
bine the tomatoes, tomato sauce,
water, salt and pepper. Pour this
over the rolls. Simmer, covered
for 30 minutes. Heat oven tO 350
degrees. Remove the lid. Bake,
uncovered, for 30 minutes. Turn
and bake 15 minutes longer.
Sprinkle with parsley and con-
tinue cooking about 15 more
minutes, or until the cabbage is
tender. Makes 15 large rolls.

1 tablespoon dry sherry
1 teaspoon salt
1 tablespoon (low-sodium) soy
sauce
Sauce:
2 tablespoons (low-sodium) soy
sauce
2 cups water
3 tablespoons dry sherry
Drain the leaves from the water
Place ground meat and leek in
food processor. Process briefly.
Then add ginger, water chest-
nuts, sherry, salt and soy sauce.
Process again, just until blend-
ed. It's all right if the water chest-
nuts are chunky. If you are using
regular cabbage, line bottom of
a large pot with torn cabbage
leaves. Divide the filling into 15.
Place a portion of filling in cen-
ter of cabbage leaf. Fold in the
sides, then roll over to close. Place
the rolls in the prepared pot. Add
sauce. Bring to a boil, cover and
reduce the heat to simmer. Con-
/D tinue cooking until the cabbage
is tender, about 1 1/2 hours.
Makes 15 regular cabbage rolls,
24 Chinese cabbage rolls.
