1t cups plus 1 teaspoon all-
purpose flour
t cup cornmeal
2t teaspoons baking powder
% teaspoon baking soda
% teaspoon salt
1 4 cup sugar
1 generous cup blueberries
1 egg
1 cup buttermilk
6 tablespoons unsalted butter,
melted

Preheat the oven to 400 de-
grees. In a medium bowl, corn-
bine 1M cups flour with the
cornmeal, baking powder, bak-
ing soda, salt, and sugar. Whisk
gently to combine. Toss the blue-
berries with the remaining 1 tea-
spoon flour.
Beat together the egg and but-
termilk. Add to the dry ingredi-
ents along with the melted
butter. Stir until just barely
blended. The batter should be
lumpy. Stir in the blueberries.
Spoon into 12 lightly greased
muffin cups.
Bake 22 to 25 minutes, or un-
til the muffins are a deep gold-
en brown.

1% cups all-purpose flour
1% teaspoons baking powder
t teaspoon baking soda
1/4 teaspoon salt
1 cup wheat bran cereal
2 eggs
34 cup milk
% cup molasses
3 tablespoons dark brown sugar
6 tablespoons butter, melted and
cooled to lukewarm
%cup raisins

Preheat the oven to 400 de-
grees. In a large bowl, combine
the flour, baking powder, baking
soda, and salt. Stir or whisk gen-
tly to blend. Stir in the bran ce-
real.
In a medium bowl, beat the
eggs. Blend in the milk and then
the molasses and melted butter.
Add the liquid ingredients to the
flour-bran mixture and stir with
a few strokes until just barely
blended. There will be lumps in
the batter; do not over mix. Stir
in the raisins.
Turn the batter into 12 greased
muffin cups and bake for 20 to 25
minutes, or until the muffins are
puffed and the edges are just be-
ginning to pull away from the
sides of the pan.
Makes 12. ❑
