1 lb. zucchini, cut in 2 in.
julienne strips.
1 /3 c. olive oil
2 to 3 t. finely minced
garlic
3 /4 lb. fettuccine
1 /2 c. to 1 c. grated
parmesan cheese
3 T. chopped parsley
2 t. basil
Steam the zucchini 5 min-
utes and remove from the heat.
Cook the fettuccine according
to the directions on the box.
Heat olive oil and saute the
garlic until soft. Add the zuc-
chini for approximately 30 sec-
onds, stirring and coating the
zucchini. Remove from heat.
Drain the fettuccine and mix in
the zucchini mixture and the re-
maining ingredients. Serve at
once and pass additional par-
mesan cheese if desired. Serves
4 to 6.

cheese
1 c. shredded Maunder
Jack cheese
2 T. butter
1 t. minced garlic
Preheat oven to 350 degrees.
Butter Ph qt. casserole. Stir
grits into 3 c. boiling water. Re-
duce heat to medium and cov-
er and cook 5 to 7 minutes until
thickened. Add small amounts
of the cooked grits to the beat-
en egg, then return this mixture
to the pan. Add the cheeses,
butter and garlic. Cook over low
heat, stirring occasionally until
the cheese has melted. Pour
grits into a prepared casserole
and bake until the top is set and
slightly puffy. Approximately
30 to 40 minutes. Let stand 5
minutes and serve. Serves 8.
