Passover has begun. As
we say in our house "Let
the games begin."
It's a well known fact that Pm
not the world's best house-
keeper and this is the only time
during the year that my hus-
band has the remotest interest
in cleaning. To say that insan-
ity reigns in our house is being
polite. We start in the attic and
don't stop until we hit the foun-
dation.
I know that we're not the
only Chametz-a-holics in the
nation. Last year at midnight
two days before the first seder,
the phone rang. I answered and
the voice on the other end of the
line said, "Have you killed him
yet?" I knew immediately that
it was my friend Mindy from
Detroit and that her husband
Fred had turned into the same
clone of Mr. Clean that my hus-
band had.
Using up the last of the
chametz is always a challenge.
We always seem to give or
throw away enough stuff to feed
a small third-world country. I

Mash once again. Bake uncov-
ered for 35 minutes and remove
from oven. Mash again and
bake an additional 10 minutes
or until the juices are bubbly
and syrupy. Cool for 30 minutes
before serving. Great with ice
cream, whipped cream or sour
cream. Serves 6.

BUTTERY BREAD AND
BERRY PUDDING

8 slices bread
'/3 c. butter or margarine
1 qt. blueberries,
raspberries or
blackberries
1 c. sugar
pinch of cinnamon and
mace mixed in sugar
Preheat over to 350 degrees.
Grease a 9x9 baking pan. But-
ter slices of bread on one side
and arrange 4 slices, buttered

'/4 c. each chopped green
pepper, onion, celery
1 t. minced garlic
2 T. margarine
1 c. (8'/4 oz.) whole peeled
tomatoes
c. water
1/2 c. uncooked rice
'/4 c. plus 1 T. tomato paste
1 /2 t. Worcestershire sauce
1 /2 t. hot sauce (optional)
8 kosher hot dogs, sliced
3 to 4 sprigs fresh parsley
or 1 T. dried
salt and pepper to taste
Heat the margarine in a
large soup pot and saute the
onion until tender, 3 to 4 min-
utes. Add the garlic and celery
and saute for another 2 min-
utes. Add the potato, water,
stock and parsley. Bring to a
simmer. Cover and let simmer
30 minutes. Remove fresh pars-
ley and discard. Remove from
heat and puree in batches in a
blender or food processor. Re-
turn to the pot. Season to taste
with salt and pepper. Serves 6
to 8.
