2 eggs
2 teaspoons salt
scant '18 teaspoon pepper
1 teaspoon sugar
1/4 cup matzah meal
'k cup fine, dry
breadcrumbs or matzah
meal for coating
oil for frying
Cut fish into 1%-inch pieces.
Place in food processor bowl fit-
ted with steel blade.Process to
chop coarsely, about 10 seconds
(may have to do this in two
batches.) Turn into mixing
bowl. Place onion, eggs, salt,
pepper and sugar in food proces-
sor bowl (no need to wash after
chopping fish). Process to a
puree. Pour over fish in bowl.
Add 1/2 cup matzah meal and
mix well to combine. Mixture
should be soft and sticky. Stir
in 1-2 tablespoons more matzah
meal, if needed. Refrigerate 1-
2 hours or overnight. With wet
hands, shape into oval patties
about 3-inches long, 2-inches
wide and 3/4-inch thick. Coat
patties on both sides with
breadcrumbs or matzah meal.
To fry: heat oil, 1-inch deep,
in a large, heavy skillet. It's hot
enough when a piece of bread
browns in 30 seconds. Gently
place patties in hot oil, spaced
about 1/2-inch apart. Cook over
medium heat, turning every 3
minutes, until patties are gold-
en brown on both sides (7-8
minutes total cooking time.)
Drain on paper towels. Makes
12.
Note: keeps 2-3 days in re-
frigerator or patties may be
frozen raw. Freeze on tray.
When firm, pack in plastic bag
or wrap individually with plas-
tic wrap. To defrost, leave
overnight in refrigerator. Cook
as above.

PERFECT FRED FISH
6 fish steaks ('/2-V,-inch
thick)
'A cup all-purpose flour
t/ teaspoon salt
V8 teaspoon pepper
1 teaspoon dried chopped
parsley
1 egg, lightly beaten

about 1/3 cup matzah meal
for coating
oil for frying
Wash fish under cold run-
ning water and pat dry with pa-
per towels.
Have 3 containers ready,
each slightly larger than one
fish steak.
Mix flour with salt, pepper
and parsley in one, beaten egg
in the second, matzah meal in
the third. Dip steaks, one at a
time, into flour, then egg, and
finally in matzah meal to coat.
Heat oil, 1-inch deep, over medi-
um heat, in large heavy skillet
(ready when a cube of bread
browns in 30 seconds.) With fish
slice, gently lower fish into hot
oil, without ovenauwding, about
3✓4-inch between each piece to
allow for easy turning. Cook
over medium heat with oil bub-
bling continuously until cooked
side is nicely browned, 5-7 min-
utes. Turn carefully, and cook
until second side is nicely
browned, 5-6 minutes longer or
until cooked through. Test by
separating flakes with point of
sharp knife; flesh should be
opaque all the way through.
Drain on paper towels. Serves
6.

DANISH IIERRING
1 pound jar pickled
herring tidbits, drained
1 medium onion, chopped
coarsely
1 large tart apple (Granny
Smith), peeled, cored
and coarsely chopped 2
pickled cucumbers,
coarsely chopped
1 cup catsup
In bowl, place herring, onion,
apple, pickles. Pour catsup over
and stir gently to mix. Chill or
serve at room temperature.
Serves 6-8 as appetizer.

MARLENE'S SPONGE
CAKE
4 eggs
1 cup sugar
1 teaspoon vanilla extract
1/4 cup self-rising flour,
sifted*
*may use all-purpose flour
plus 2 teaspoons baking pow-
der
Preheat oven to 350 degrees.
Oil 9x5x2-inch loaf pan or spray
with non-stick vegetable spray.
Break eggs into cup, one at a
time, then transfer to medium
mixing bowl (if one is bad, it
doesn't ruin those in the bowl).
Add sugar and vanilla extract
and whisk with electric mixer
just until thick and pale. Do not
overbeat. With a spoon, fold in
sifted flour. Pour into prepared
pan. Bake in preheated oven for
30-35 minutes or until top is
firm when pressed gently in
center and cake has shrunk
slightly from side of pan.
