CHOCOLATE CHERRY
MUFFINS
11/2 c. unsifted flour
/2 c. sugar
2 t. baking powder
1 /2 t. salt
1 /2 C. milk or non-dairy
substitute
1 /4 c. vegetable oil
1 egg beaten
1 /2 semi-sweet chocolate
chips
1 /2 c. chopped nuts
1 /4 c. chopped maraschino
cherries, well drained
2 t. grated orange peel
Combine flour, sugar, baking
powder and salt in a medium
bowl. Add milk, oil and egg. Stir
until just blended. Stir in-
chocolate chips, chopped nuts,
cherries and orange peel. Fill
greased or paper-lined muffin
cups 2/3 full. Bake at 400 degrees
for 25 to 30 minutes or until
golden brown. Makes 12
muffins.

popcorn
3 /4 c. Spanish peanuts
4 T. butter
1 c. brown sugar
1 /2 C. corn syrup
1 /9 c. molasses
1 /4 t. salt
Preheat the oven to 250 de-
grees. Combine the popcorn and
peanuts in a metal bowl or on a
cookie sheet and place in the
preheated oven. Combine all
the remaining ingredients in a
saucepan. Stirring over medi-
um heat, bring the mixture to
a boil. Using a cooking ther-
mometer, bring the mixture to
the hard ball stage 260 degrees.
This will take about 20 minutes
or until you notice the mixture
turning dark brown. Remove
the popcorn and peanuts from
the oven and working quickly
pour the caramel mixture in a
fine stream over them. Mix with
a wooden spoon. Then place
them back in the oven for 15
minutes. Mix well every five
minutes so that all of the pop-
corn is coated. Cool and store in
a covered container. ❑
